Winter SoupPrint Recipe
- 1 table spoon olive oil
- 1 large onion
- 3 cloves of garlic
- 1 carrot
- 1 parsnip
- 1 turnip
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 tablespoon nutritional yeast
- 1 pint of vegetable stock
- Salt & pepper to taste
Add the oil to the pan and heat.
Add in the onions and garlic and caramelise.
Add in all of the chopped vegetables and stir.
Cook for 5 mins then add the smoked paprika, rosemary, thyme, nutritional yeast and stir.
Add the pint of vegetable stock, stir and cover cooking on a low heat for 30 mins.
Uncover, stir and scoop out all of the large chunks to blend into a fine purée.
Add the purée back in with the liquid and stir.
Serve with a warm crusty roll. Enjoy!
