Ingredients

  • 1 table spoon olive oil
  • 1 large onion
  • 3 cloves of garlic
  • 1 carrot
  • 1 parsnip
  • 1 turnip
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon nutritional yeast
  • 1 pint of vegetable stock
  • Salt & pepper to taste

Instructions

Add the oil to the pan and heat.

Add in the onions and garlic and caramelise.

Add in all of the chopped vegetables and stir.

Cook for 5 mins then add the smoked paprika, rosemary, thyme, nutritional yeast and stir.

Add the pint of vegetable stock, stir and cover cooking on a low heat for 30 mins.

Uncover, stir and scoop out all of the large chunks to blend into a fine purรฉe.

Add the purรฉe back in with the liquid and stir.

Serve with a warm crusty roll. Enjoy!
