Vegan Pasta e Fagioli

Pasta e fagioli is the perfect dish! A healthy, hearty, vegan dish with plenty of vegetables for bite and bursting with flavour!


Vegan Pasta e Fagioli

Serves: 4 Cooking Time: 20 minutes


  • 1 carrot
  • 2 stalks of celery
  • 2 sprigs of rosemary
  • 2 cups of pasta
  • 4 cups of water
  • 1/2 tin of tomatoes
  • 1/2 tin of green lentils
  • 1 tin of haricot beans
  • 1 pinch garlic pepper
  • 1 pinch of onion salt
  • 1/2 table spoon of paprika
  • 2 table spoons of vegetable stock
  • 1 drizzle of olive oil
  • 1 onion
  • 3 garlic cloves
  • 2 pinches of dried parsely



Firstly finely dice the onion and garlic cloves. Add some oil to the pan and apply low heat. Chop the carrot and celery stalks into rings and add all chopped ingredients to the warm pan. Allow to brown for 5 minutes, stirring occasionally.


Add the tin of tomatoes, green lentils and haricot beans, including all of the juices. Stir the pan to combine all of the ingredients. While the ingredients cook start to peel the rosemary petals from the stalk and chop very finely. Add the rosemary to the pan along with: vegetable stock, garlic pepper, onion salt, parsley and paprika and stir. Add the dried spiral pasta and four cups of boiling water and stir then allow to simmer for 15 minutes.


Once the pasta has softened but is still slightly firm to bite, it is ready to serve. Serve with a drizzle of olive oil, dried parsley and fresh rosemary. Enjoy!
