Vegan Cottage Pie

  • 1 onion diced
  • 2 cups soy mince
  • 2 table spoons garlic purée or three cloves of finely chopped garlic
  • 1 carrot finely chopped
  • 1 cups frozen peas
  • 2 table spoons of gravy granules
  • 2 cups water
  • 1 tsp rosemary
  • 1 tsp thyme
  • 2 potatoes boiled and mashed
  • Salt
  • Pepper
  • Mustard



Add the peeled chopped potatoes to boiling water for 25mins.


Add a little oil to a deep pan and put it on low heat. Add in the onions and garlic and allow to sauté for 5 mins until translucent. Add in the mince, carrots, peas, rosemary and thyme and fry for a further 5-10 mins on medium heat. Add in the gravy granules and water and stir together. Allow to simmer on low head and thicken for 10 mins.


Take the potatoes out of the water and mash with a table spoon of mustard (optional soy cream or plant butter too)


Add the mince to the dish and cover with the mash, cook for 30mins and serve with your choice of greens
