Mango Bhaji Burger

The mango bhaji burger is my answer to the stereo typical perception of a boring, dry tasteless vegan burger patty. I love onion bhajis, they are crispy, flavoursome and filling with bags full of awesome texture.

  • 50grams flour
  • 1 large onion
  • 70ml carbonated water
  • Corriander – fresh
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • Salt – pinch
  • 1 fresh sliced Mango
  • Sweet green chilli sauce



Finely slice the onion. Do this by cutting the onion in half and peeling off the outer coating of both halves. The onion can then be sliced from top to bottom as thinly as you can. The key is to ensure that you have a very sharp knife and a steady hand.


Add all dry mix: flour, rough chopped coriander, cumin, turmeric and salt. Add water a little as a time and mix until a thick batter. it should be the same consistency as an american pancake batter, very thick. Now add the thin onion slices and allow them to marinade in the batter for around ten mins. Take the mixture and form into two burger patties and freeze. Heat some oil in a pan until it starts to smoke slightly. Apply the patties and fry until crispy and golden brown. Fry for a minute on the high heat and then turn the heat down to keep the patty from browning too quickly.


Cut a soft bun in half, now add the first burger patty and layer sliced fresh mango on top. Now add the second patty on top of the mango and add the sweet green chilli sauce on top before topping it with the second half of the bun. Add any left over mango on the side no need for fries, this burger is a meal in itself! Enjoy!
