Spring Roll Burritos

Spring roll burritos are a fusion of Mexican and Asian cuisine. Created as a simple alternative to traditional spring rolls that provide a substantial tasty dish.

Because of the nature of this dish I suggest that people adjust the recipe to meet their own personal preference.

Ingredients

  • Cabbage - 1/4 small
  • Carrots - 1 grated
  • Bean - sprouts half a pack
  • Spring onions - 3
  • Garlic puree - 1 1/2 table spoon
  • Tortillas - 6
  • Smooth peanut butter - 2 table spoons
  • Olive oil - drizzle
  • Mushrooms - 7 chestnut
  • soy sauce - drizzle
  • Golden syrup - 3 table spoons
  • Sesame seeds - Handful

Firstly prepare the vegetables:

Finely slice 1/4 of a small cabbage into strips

Grate the large carrot

Finely chop the chestnut mushroom into small cubes

Finely chop the spring onions removing the root tip and leafy ends

Now that the vegetables are prepare, drizzle olive oil in the wok and add the vegetables. Cook them on a low heat for 15 minutes.

While the vegetables are cooking mix together the peanut butter, soy sauce and garlic paste in a bowl and set to one side.

Warm the tortilla in a pan on an extremely low heat to only allow the tortilla to warm through and not crisp. This will allow the tortilla to become more flexible and reduce the risk of splitting during the rolling process.

Now take the tortilla and place a spoonful of the vegetable mix into the centre, cover with a spoonful of peanut butter and garlic sauce and sprinkle with sesame seeds.

To roll the burrito, fold the nearest edge to you away from you to the opposite edge. Then press down and scrape the mixture towards you encasing it in the centre of the burrito. Taking your little finger and thumb, press down firmly on the edges of the mixture through the burrito and trap all of the mixture inside. now fold the two outer edges in left and right and roll the burrito away tightly.

Place the burritos in a pan or skillet on a low heat with a little oil making sure that you place the exposed flap downwards. After a few minutes, turn the burritos, once golden on either side, remove from the heat and serve with the sticky peanut butter and garlic sauce.
