Special Sauce

Pizza is perfect for any occasion. When accompanied with a special sauce the depths of flavour and texture are far beyond what can be accomplished with a standard passata.

  • Fresh oregano Hand full
  • Fresh basil Hand full
  • Olive oil drizzle
  • Peeled plum tomatoes 1 tin
  • Cherry tomatoes 1 handful
  • Chilli puree 1 teaspoon
  • Garlic puree 1 tablespoon
  • Sun ripe tomato puree 1 tablespoon
  • Tomato puree 1 tablespoon
  • Aubergine pesto 1 tablespoon
  • Baking soda 1 pinch
  • Dried basil large pinch
  • Dried oregano large pinch
  • Onion salt 1 pinch



Firstly, take the fresh herbs and chop them together using a cross chopping technique to get them all finely chopped together. Add a drizzle of olive oil to your pan, place it on a low heat and add in the chopped herbs.


Next, take the tin of peeled plum tomatoes and add then in to a large mixing bowl. Chop the cherry tomatoes into quarters and add them into the bowl. Add in, Chilli puree, Garlic puree, Sun ripe tomato puree, Tomato puree and Aubergine pesto into the mixing bowl. Using your hands, begin to squash all of this mixture together, you want to make sure that all of the tomatoes are broken up and softened and that they absorb all of the seasoning flavours. Now you can add all of this mixture to the pan.


Add the dried herbs and onion salt to the mixture and mix with a spatular then leave for ten minutes. After the mixture has been sat on a low heat for 10 minutes, take a potato mashing implement and gently mash the mixture to ensure that all of the tomatoes have broken up and to achieve a smooth sauce texture without large lumps. Leave to simmer for an additional 5 minutes. Now add the pinch of baking soda, this will go some way to neutralising the acidity of the sauce. Now that all of the ingredients are in the sauce, it can be removed from the heat, allowed to cool for 15-20 minutes and then applied to a pizza base or bottled for later.


This sauce can also be used as a tasty base for a pasta dish or lasagne. Enjoy!
