BBQ Bean, Brussels, Mango & Lime Tacos

BBQ bean, brussel sprouts, mango chickpeas and lime tacos are such an awesome meal choice. Try them when you have a night in with family and friends. Build them up and serve them or allow people to build their own. Feel free to add fresh salad and slaw.

Ingredients

  • 150g drained green lentils
  • 150g haricot Beans
  • 1 tsp smoked paprika
  • 4 chillies
  • 1 onion
  • 150g Brussels sprouts
  • 100g chickpeas
  • 1/2 tbsp. onion salt
  • 3 cloves of garlic
  • 1 tbsp. olive oil
  • 1 avocado
  • 1 lime
  • 1 tbsp. mango chutney
  • 4 tbsp. BBQ sauce
  • 4 soft flour standing tortilla
  • 2 tbsp. maple syrup
  • 50g vegan cheese

Instructions

Finely chop the onion and garlic. Add half the oil to a saucepan and heat before adding the garlic and onions. Chop and de-seed the chillies and add three of the four to the onions and garlic.

Cut all of the Brussels sprouts in to quarters. Add one table spoon of oil to a separate pan and add the quartered Brussels sprouts. cut the lime in half and squeeze all of the juice over the Brussels sprouts. Add 1 tbsp. of maple syrup, mix and cook on a very low heat.

Add the lentils and haricot beans to the onions and garlic pan, stir then add paprika, onion salt and BBQ sauce and mix. Allow to cook for 10 minutes on medium heat.

In a bowl, add the chickpeas, maple syrup and mango chutney. Stir together to combine.

place 4 standing tortillas on a baking tray or skillet, empty the bean chilli into the soft flour standing tortillas in even amounts until they are about 3/4 full. Now add the fried lime Brussels followed by the mango chickpeas. Add a sprinkle of vegan cheese to each tortilla. Squeeze lime onto each and place in a preheated oven for 15minutes on 160 degrees, take out of the oven and add a dollop of guacamole to each tortilla and serve two per person. Enjoy!
