Almond butter, choc chip blondies are a real treat. These are made with coconut flour and reduced sugar. I hope you enjoy them as much as I do. Be sure to check out the video for extra tips!
Almond Butter, Choc Chip BlondiesPrint Recipe
- 1/4 cup coconut flour
- 1/4 cup oats
- 1/3 cup sugar
- 1/2 cup plain flour
- 3/4 cup almond milk
- 1 table spoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 3/4 cup almond butter (I used butter belle, almond butter with expresso and vanilla)
- 100g dairy free dark chocolate
- a pinch of salt
Add all of your dry ingredients to a blender, this includes: flour, oats, baking powder, salt, cinnamon, coconut flour and sugar. Blend the mixture to a fine powder and place in a large mixing bowl.
Add the: Almond butter, almond milk and vanilla extract to the mixture and stir together to combine. Now take the 100g of dark chocolate and break into cubes then carefully using a knife, chop each cube into quarters to create large chunks. Add these chunks to the mixture and stir.
Taking a baking tray roughly 8" by 6" or a partitioned tray to make about 9 brownies, start to spoon the mixture into the tray and flatten off with the back of the spoon.
Add to tray to a preheated oven at 180 degrees celsius and bake for 30mins. Check to see the colour of the brownies after 30mins and taking a sharp thin knife press into the centre of the mixture to check if it is cooked through. If the knife comes out clean, take the tray out of the oven and allow to cool for 30mins before removing the brownies from the tray. Allow to cool a little more and enjoy!
