​Vegan Pancakes​

Vegan pancakes are one of the most infamous vegan dishes around! They’re a real crowd pleaser for breakfast, lunch and dinner.

Ingredients

  • 1 1/4 cup of white flour
  • 1 teaspoon baking powder
  • 1 cup of almond milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Instructions

Add the flour and baking powder to a large bowl and mix.

Now add all other ingredients (almond milk, maple syrup, vanilla extra and salt) mix together with a whisk. Note, you aren't trying to whisk the mixture or add bubbles but a whisk works best to combine all of the ingredients.

Use a brush to apply minimal oil to a frying pan on low heat and apply 1 table spoon of batter mixture to the pan.

Allow to cook for a little over 30 seconds until the pancake is firm enough to slide and the pan is shaken, then flip and repeat until both sides are crispy and golden.

Repeat this with all of the batter and you should have between 12 and 16 pancakes. Cover with your favourite toppings and enjoy!
