- Signature pizza base dough - split into 4 or 6 even balls depending on the size required.
- Special pizza sauce
- Cheese (any diary free cheese subtitle for pizza)
- Any other fillings desired
Using a rolling pin, roll the balls of dough into flat discs and transfer them to a heavily semolina dusted flat baking sheet. half of the base should be on the tray and half hanging off the tray ready to fold over.
Now ply the bases with special sauce and spread out remembering that one half of the base is not to be covered and is a lid.
Add your selected cheese to the base only in the area covered by sauce.
Finely chop the spinach and add on top of the cheese. Sprinkle with the herbs and begin to fold the empty half of the base over the filling taking it to the opposite edge and running finger and thumb all along the edge crimping the dough, enclosing the filling.
Dust the top of the calzones and place in a preheated over on 180 degrees for 15 minutes. Remove from the oven and allow to cool slightly before serving. Caution, the filling will be very hot!
